Ingredients:

  • 500g pork ribs
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon onion, diced
  • 2 tablespoons Sichuan peppercorns
  • 2 tablespoons dried red chili peppers
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 cup water
  • Salt and sugar to taste

Instructions:

  1. Cut the pork ribs into bite-sized pieces.
  2. Heat the vegetable oil in a wok or large pan over high heat. Add the ginger, garlic, and onion and stir-fry until fragrant.
  3. Add the pork ribs and stir-fry for about 5 minutes until browned on all sides.
  4. Add the Sichuan peppercorns and dried chili peppers and stir-fry for another minute.
  5. Pour in the soy sauce, Shaoxing wine, and water. Bring to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the meat is tender and the sauce has thickened.
  6. Season with salt and sugar to taste before serving.
