Ingredients:

  • 500g chicken breast, cut into small cubes
  • 1 green pepper, diced
  • 1 red pepper, diced

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 2 tablespoons peanuts (optional)

Instructions:

  1. In a bowl, mix together the soy sauce, rice vinegar, cornstarch, and a pinch of salt and pepper. Add the chicken cubes and stir to coat. Set aside for at least 15 minutes.
  2. Heat the vegetable oil in a wok or large frying pan over high heat. Add the chicken and stir-fry until it turns white and is cooked through. Remove from the pan and set aside.
  3. In the same pan, add a little more oil if needed, and stir-fry the garlic, ginger, onions, green pepper, and red pepper until they are tender but still crisp.
  4. Return the chicken to the pan and stir to combine with the vegetables. Pour in the sauce and stir-fry for another minute or two until the sauce thickens and coats the chicken and vegetables.
  5. Taste and adjust seasoning if necessary. Garnish with chopped peanuts if desired.
  6. Serve hot with rice or noodles. Enjoy!
